2 boneless skinless chicken breasts

1 large or 2 small lemons

1T. olive oil and 1T. extra for cooking

1 T. butter

salt and pepper

Preheat oven to 350º F

Rinse and dry the chicken breasts and place into a non-metallic bowl or shallow dish.  Squeeze lemon and drizzle olive oil onto chicken.  Add salt and pepper and let marinate for 15 minutes.

Melt butter and 1 T olive oil in a large frying pan over medium high heat until butter starts to foam.  Transfer chicken pieces to frying pan and cook until golden browned on both sides (4-5 minutes per side).  Then transfer chicken to a shallow baking dish and bake in the oven for 20 minutes or until cooked through.
